No matter how good or bad of a cook you are, I think that everyone should have a “signature dish”. Today I am sharing MY signature dish. If you are a friend or family member of mine, I bet this dip looks pretty familiar to you. This hot spinach artichoke dip is my go-to appetizer recipe for parties, holidays, and football gatherings. I love that it takes less than 10 minutes to mix it all up, and you can even mix it up the day before the shindig and then just bake it for the party. It also works to heat this dip up in a small party-size crock-pot. Easy peasy!
Start by placing 2 (8 oz.) packages of softened cream cheese in a bowl. Next add 1 1/2 cups of shredded parmesan cheese. I have also used the grated parmesan cheese that comes in a shaker, that works too!
Next goes in a 1/4 cup of mayo.
Toss in a 1/4 cup of sour cream.
As long as it’s already dirty, use the same measuring cup to add in a 1/4 cup of milk.
Next add a 1/4 teaspoon onion powder, 1/4 teaspoon black pepper, and 2 cloves minced garlic. For this dip I actually use 1 teaspoon of jarred minced garlic. I know, I know….the HORROR!! You caught me, obviously I’m not a gourmet chef if I own jarred garlic. But it’s the only thing I had on hand the first time I made this dip and now I’m afraid if I use fresh garlic it will ruin everything I love about this recipe. Irrational, right? Well if you have the fresh stuff and want to give it a go, by all means go for it. Who knows, maybe it will turn into the “Best BEST Ever”! 😉
Next chop three cups of fresh spinach. Throw it in the bowl of cream cheese mixture.
Drain the water from a can of artichoke hearts. Then give the artichokes a rough chop.
Once you have the spinach and artichokes in the bowl mix it all up really well so that it is all blended.
Spread the mixture into an 8-inch pie dish and bake at 350 degrees for 30-35 minutes or until heated and the top starts turning a slightly golden color. You could also put the mixture into a party-size crock pot and heat on low until melted if you don’t want to bake it. The nice thing about putting it in a crockpot is that if you are at a party it stays hot the whole time.
Serve with crackers, tortilla chips, or crusty sliced bread. I hope this hot spinach artichoke dip turns into your signature dish as well!
