My mom has always called these gooey chocolate fudge oatmeal bars “hiphugger bars”. I guess you could call her a straight shooter, because if you take one look at the ingredients it’s easy to tell that these bars really will go straight to the hips. But that is how dang good they are, even when someone warns you these bars aren’t bikini-season friendly, you will won’t be able to resist.
In a bowl add 1 cup butter, 2 cups brown sugar, and 2 eggs.
Mix everything up really well.
Next add 2 1/2 cups flour, 1 teaspoon baking soda, 1 teaspoon salt, 2 teaspoons vanilla, 2 cups oatmeal, and 1 1/2 cups coconut. If you do not like coconut you can skip it. I am not the biggest coconut fan, but it doesn’t bother me in these bars at all, the coconut is not overpowering.
Stir it all together until it forms into a big dough ball.
Press down 2/3 of the mixture in the bottom of a greased 9 x 13″ pan. Save the remaining 1/3 in the bowl for later.
Next melt together a 12 oz. bag of milk chocolate chips, a 14 oz. can of sweetened condensed milk, and 2 tablespoons butter. My microwave has a “melt” setting that melts chocolate perfectly, so I used a glass dish in the microwave for this step. But if you want to go the double boiler route, go for it. Once the chocolate is melted and smooth add 2 teaspoons vanilla and stir.
Pour the melted chocolate mixture over the pressed oatmeal in the pan.
Then sprinkle the remaining 1/3 crumbs on top of the chocolate. Bake at 350 degrees for 25 minutes. I hope you enjoy these gooey and delicious bars, and don’t blame me for the hip hugging, I warned you!
