Don’t you just love having “go to” recipes? So whether you are bringing a dish to a potluck or just having a quiet dinner at home with your family, you don’t have to scour online looking for a great recipe because you already have a winner in your recipe box. These beans are my “go to” summer side dish; they are perfect for potluck dinners or parties because you can assemble them the day before and pop them in the oven or plug in the crockpot the day of the event. I’m ALL about make-ahead food anytime I’m hosting a party, less time stressing in the kitchen and more time enjoying people’s company. Another bonus of these beans is they reheat very well, I might even dare to say they get even better while sitting in the fridge overnight. So you might as well double the recipe, more leftovers to enjoy!
Start by browning 1/2 lb. ground beef, 1/2 lb. bacon cut into 1-inch pieces, and 1 cup chopped onion in a skillet over medium high heat.
TIP: Raw bacon is difficult to cut with a knife, so pull out your kitchen scissors and snip away, it’s so much easier and faster.
Once the ground beef is browned drain the fat and place the meat mixture into a crockpot.
Add the following cans of beans: 1 lb. can partially drained butter beans, 1 lb. can partially drained kidney beans, two 1 lb. cans of pork and beans. Do not drain the cans of pork and beans.
Gather the seasonings for the beans: 3/4 cup brown sugar, 1/2 cup ketchup, 2 teaspoons white vinegar, 1 teaspoon mustard, 1 teaspoon salt.
Stir together the meat mixture, cans of beans, and seasonings in the crockpot. If you don’t need the beans until the next day just pop the crockpot in the fridge overnight. Cook on low for 2-4 hours. These beans taste just as good out of the oven, so if you’d prefer that method just place the beans in a casserole dish and bake at 350 for 40 minutes.

- Cook in a crockpot on low for 2-4 hours -or- bake in a casserole dish at 350 degrees for 40 minutes.
