Ingredients
  • 2cups chickencooked and chopped
  • 3 cups shredded Colby Jack cheese blend
  • 1(4 oz.) can chopped green chilies
  • 3/4cup sour cream
  • 8(8-inch) flour tortillas
  • 1(10 oz.) can enchilada sauce
  • shredded lettuce(optional)
  • chopped onion(optional)
  • black olives(optional)
  • chopped tomatoes(optional)
Instructions
  1. Heat oven to 350 degrees. Spray 13×9-inch glass dish with cooking spray.
  2. In a bowl mix chicken, 1-1/2 cups of cheese, chopped green chiles, and sour cream. Stir until well mixed.
  3. Layer 3 tortillas in the baking dish, overlapping so the entire bottom is covered. Spread half of the chicken mixture over the tortillas. Pour half of the enchilada sauce over the chicken.
  4. Layer 3 more tortilla, the remaining chicken mixture and remaining enchilada sauce.
  5. Place 2 tortillas over the enchilada sauce. Sprinkling with remaining 1-1/2 cups cheese.
  6. Cover with foil and bake 45-50 minutes or until bubbly.
  7. (Optional) Garnish with shredded lettuce, chopped onions, black olives, and sour cream.
